Question How do you make Carbonara cream?
This post it is a way to better know our users, their habits and their knowledge about one of most published paste recipe: Carbonara.
1) Where are you from? (for US specify state and/or city too) 2) Which part of the egg do you use? (whole or yolk only) 3) How many eggs for person? 4) Which kind of cheese do you use? 5) How much cheese do you use? (in case of more kinda cheese specify the proportions) 6) How do you prepare the cream? 7) When and how do you add the cream to the pasta?

Homemade Carbonara with plenty of Guanciale.
Guanciale, spaghetti, a touch pf MSG, 2 egg yolks with pecorino, ground black pepper, and more pecorino to top it all off.
I was so generous with the guanciale that I took almost a shot glass worth of excess guanciale tallow oil to use for later!

Italian Culture Some good food from our trip to Milan, Verona & Lake Garda
Iāve never been on a holiday that has totally changed my way of eating - since coming back I have pasta, pizza , tomatoās , mozzarella, burrata and more every week. I canāt wait to visit Italy again! Question What are the authentic finishing / seasoning oils to put on pizza napoletana? (i.e. herb infused?)
When you order a napoletana pizza from restaurants, they offer an oil you can add after the pizza is already cooked.
I think it was "herb-infused" but I don't know which herbs and how it was prepared. I just remember that it tastes very "light" unlike the bottled EVOO that use at home.
How can one make this oil, which herbs are recommended and/or authentic?
Is it possible to get a very mild tasting oil without resorting to non-EVOO?

Homemade CARBONARA š„
Carbonara: ricetta e preparazione
400 g pasta (spaghetti, mezze maniche, bucatini) š
280 g guanciale š„** **
200 g pecorino romano š§** **
5 tuorli (media grandezza) š„
q.b.pepe nero in grani
Procedimento:
ā¢Sbatti i tuorli d'uovo con il pecorino romano grattugiato e abbondante pepe nero fino a ottenere una pasta densa.
ā¢Versa un mestolino di acqua di cottura della pasta (o un po' di grasso caldo del guanciale) e frusta energicamente per sciogliere il composto in una crema vellutata e omogenea.
ā¢Rosola il guanciale in padella finchĆ© ĆØ croccante
ā¢cuoci la pasta al dente in acqua poco salata.
ā¢Scolala nella padella a fuoco spento
ā¢unisci il composto di tuorli e pecorino con un goccio d'acqua di cottura e manteca energicamente fino a creare una crema fluida.
P.S: usare uova fresche e per la vera carbonara di deve usare il guanciale!
